Simple Scallop and Uni Crudo

You’ve probably heard of CnC (Catch and Cook) but have you ever tried the much easier CnnC? Catch and not cook! This is an incredibly simple and absurdly delicious meal.
Ingredients
1 Orange, juiced
4 Yuzu, juiced
1 Tbsp Ginger, grated
1 Tsp White Miso Paste
1 Tsp Coco Aminos
2 Tbsp unfiltered sake
Fresh harvested Scallops
1 Spicy Pepper (e.g. Thai), thin sliced
Fresh harvested Uni
Mint Leaves
Chives, thin sliced
Sea Salt (homemade - instructions here)
Method
Here is a detailed and complex description of what to do. Timing is very important.
STEP 1: Hop in the ocean and grab yourself some scallops and urchin (make sure your local regulations allow for take of invertebrates).
STEP 2: Mix the first 6 ingredients, pour them over the pile of scallops in a small bowl or deep plate.
STEP 3: Garnish with the last 5 ingredients.
STEP 4: Impress your taste buds.
