Fish in Tomato Sauce

Ingredients:

  • Black peppercorn,

  • Allspice berries,

  • Lemon,

  • Capers,

  • Honey,

  • Salt,

  • White wine

  • Unsalted butter,

  • Olive oil,

  • Yellow onion,

  • Garlic,

  • Tomato paste,

  • San Mariano canned tomatoes,

  • Fish stock,

  • Bay leaf,

Sauté one onion and 3 cloves of garlic. Add 1 can San Marzano tomato’s to pot with garlic and onions and reduce. Add tomato paste, bay leaf, pepper, fish stock, allspice berries and honey and let reduce to desired flavor and consistency. Salt to taste. Get your fish filets/belly meat and coat in your flour/seasoning of choice. Place in hot pan with oil. Remove when slightly crispy and add to a dish with the sauce. Top with capers, cilantro and lemon.
