Yellow Tail Poke Stack

A good friend of mine, Foraging and Spearfishing Legend Matt Bond (@Salabat408), hooked me up with fresh yellow-tail he speared a couple days ago. We had family in town so I thought it would be fun if we all got to be creative with the ingredients and make our own poke stacks. It turned out super tasty.
For the dressing
You’ll need to mix
sesame oil
soy sauce
rice vinegar
sriracha
tobiko
lemon zest
For the stack you can use, but not at all limited to:
Cucumber cut into strips to create a base
White Sushi Rice (recipe here)
Carrots
Avocado
Edamame
I started by using a mandolin to slice a cucumber length-ways and overlapped it on a cutting board. Then I took some baking paper laid it over the cucumber and used a plate as a stencil to draw a circle around the edge of the plate with a hobby knife razor blade. I took a piece of clear plastic, and created a cylinder with tape (an old CD-R case would work too if you cut off the top) and began to layer the ingredients.
I started with the cooked sushi rice and pressed it down to create the foundation, followed by thin sliced avocado, radish, carrots, yellow tail, and edemame.
Let your imagination go here and put whatever you think looks and tastes best to you. For garnishes I used pickled lotus root, enoki mushrooms, Nasturtium pedals and leaves, radish, daikon radish and bean sprouts. Again, this all to preference and taste, but mixing and matching texture and colors is a sure fire way to elevate you catch and impress your guests!
What is even more fun is let your guests create their own and see who can make the prettiest or tastiest version!
